To celebrate National Vegetarian Week, our design intern (and resident veggie), Alice shares her favourite meat free meal. Dig in! 
 
Having a meat-free diet no longer means you’re stuck for choice, as almost any recipe can be ‘veggie-fied’ these days. My go-to dish at the moment is this BBC Good Food’s creamy alternative to a meat lasagne. It’s an easy veggie meal without the faff, so it’s perfect if you’re craving some comfort food!

 

What you’ll need:

  • 400g spinach
  • 1 tbsp olive oil
  • 2 garlic cloves, crushed
  • 250g mascarpone
  • 1 tsp ground nutmeg
  • 100g  of grated parmesan (or veggie alternative)
  • 9 lasagne sheets
  • 100ml double cream
  • 3 large courgettes sliced

How to make it:

Pour boiling water over the spinach to wilt it. Leave it until it’s cool enough to hold and then squeeze out the excess water. Heat the oil in a frying pan and add the garlic. One the garlic is soft, tip in the nutmeg and cook for 1 min, then add the mascarpone, spinach, half of the cream, plus half of the grated cheese. Season, stir and put it to one side.

Then put your oven on 180C and spread a third of the mixture into a baking dish, cover with 3 lasagne sheets, then add a layer of courgettes. Repeat this process twice more until the dish is almost full, then pour the rest of the cream over the last layer and sprinkle with more cheese. Cook for 45 mins, then enjoy!
